The New Thrill of Old Restaurants

It is time to go back to restaurants, in case you haven’t heard. New York’s pandemic restrictions have been lifted, dining rooms can once again be full, bar seating has returned, and masks are quickly becoming optional accessories. The state even set off fireworks the other night to honor essential workers and, I guess, celebrate the end of COVID?

Okay, fine, yes, COVID is still here. The pandemic is not over, yet many people seem to agree it’s over enough. Vaccinated folks have been getting back to real life for a while now and, with Governor Cuomo lifting almost all lingering restrictions this week, the pathway back to normalcy is as clear as it could possibly be. So, let’s eat?

Where should we go? is a question you’ll probably ask your friends very soon, if you haven’t already. It’s a good question! Oh, look, there are — almost unbelievably — a bunch of new restaurants. There are big-money projects that feel like restaurants from another era. There are little cafés that were forced to open in the middle of the pandemic for one reason or another. There are some pop-ups that are maybe worth checking out?

For me, personally, these new restaurants aren’t really what I want right now. It’s not that I’m unexcited by the idea of new restaurants. After 15 months of takeout, sidewalk meals, and way too much home cooking, I’m excited by the idea of pretty much anything that happens outside of my apartment — but on the other hand, everything feels new right now. The most mundane activities imaginable can be exhilarating. Walking down the street without a mask feels new. Checking out a book, in person, at a library feels new. Sitting down to have coffee with somebody who doesn’t also live in my home feels so good that it’s like I’m getting away with something.

And the idea of going inside a restaurant — any restaurant — to sit down and eat an actual meal among other (hopefully vaccinated) diners is incredible. What’s slightly more incredible is that this is a chance to rediscover all the places and experiences I used to take for granted, like they were no big deal, and have sorely missed over the last year-plus.

I’ve missed antipasti and glasses of rosé in King’s perfectly cheerful back dining room. I’ve missed martinis inside Walker’s and burgers inside Melon’s. I’ve missed somewhat sheepishly asking for another plate of bread, and then another, at Roman’s as my table mops up whatever sauce is lingering in an almost-finished bowl of pasta. I’ve missed noodles inside Super Taste and mortadella pizzas inside Ops.

I’ve missed the way one good friend will let the last bite of a shared plate linger and linger until a server finally tries to take it away and he dives to finish it. I’ve bizarrely missed the way another friend is, without fail, exactly 20 minutes late every time we meet up, and then spends another 10 minutes apologizing. I’ve missed the freedom of asking a sommelier to please just let us have whatever wine they’re excited about right now because they’re going to pick something better than we ever could anyway.

New restaurants can be great, but I already know these experiences will be better, and they are what I missed so much when we were all staying inside. It’s rare to have so many little rituals that are both familiar and fresh, so my plan is to embrace that. I know that the novelty will wear off, and that, as hard as it is to believe even now, all of this will start to feel routine again. And when that happens, great! There will be new places to try and new rituals to find. But until then, I’ll be at Roman’s, ordering an Americano and waiting for my friend, who just texted that he’s on his way and will be here any minute, I’m sure.

An All Elite Wrestling console video game has been in the works for some time now, but now fans anxiously awaiting information have some real footage of the game to check out.

AEW superstar Kenny Omega showcased footage of the game in a recent tweet from the AEW Games Twitter account. The quick peek included some artwork for superstar Darby Allin’s character model as well as some actual gameplay footage. The footage itself is pretty barebones, showcasing Allin’s character throwing a couple of kicks and punches against a green dummy character before hitting his signature Coffin Drop finishing maneuver. However, the information is sure to get fans excited for what’s to come.

Initially announced late last year, the AEW console game will attempt to recreate the feel of actual All Elite Wrestling events, and give fans the ability to play out some of their favorite scenarios in the process. Not too much else is known about the game at the moment (including its release date), but All Elite Wrestling is investing pretty heavily into the AEW Games division, according to Forbes. Fans have been clamoring for a way to play as some of their favorite superstars for some time now, and it looks as if AEW and developer Yuke’s are making some progress in development.

With the city of Chicago lifting all restrictions as of June 11th, it wasn’t long before we began to see the flood gates of shows open up.

Smartbar, one of the cities premier house and techno clubs, made its return known with its surprise lineup drop at the start of this week. Tickets went on sale the moment they made the post, and it was no surprise that tall six events sold out almost immediately. Fans clamored at the hopes of getting to step foot back into this music mecca. I mean, who wouldn’t with artists like Honey Dijon, DJ Heather, Octa Octa, Eris Drew, Derrick Carter, and Michael Serafini rounding out the nights over the next two weeks.


This announcement came only hours after Lollapalooza released more than 50 afterparties for its festival weekend at the end of July. This city is in for one hell of a summer back, and no one does it quite like Chicago.

Full written recipe of Chicken baida roti & Spring rolls

Prep time: 30- 40 minutes
Cooking time: 15-20 minutes
Serves: 4-5

For chutneys:
Imli 1 cup
Kashmiri red chillies 10-12 nos.
For pudine hare pyaaz aur tamatar ki chutney:
Hara pudina 2 cups
Hara dhaniya 1/4th cup
Hara pyaaz 1/3rd cup
Hari mirch 10-15 nos.
Tamatar 4 medium size
Lehsun 3-4 cloves
Jeera powder 1 tbsp
Anardana powder 2-3 tbsp
Kala namak 2 tsp
Salt to taste
Imli pulp 1 cup
Lal mirch aur imli ki chutney:
Soaked Kashmiri red chillies
Imli pulp 2 cups (approx.)
Hari mirch 4-5 nos.
Lehsun 9-10 cloves
Adrak ½ inch
Jeera powder 1 tbsp
Kala namak (Black salt) 1 tsp
Amchur powder 1 tsp
Kashmiri red chilli powder 1 tbsp
Jaggery/sugar 1 tbsp
Salt to taste
Lemon juice 1 tbsp
Hara pudina 2 tbsp
Method:
Soak the tamarind & Kashmiri red chillies separately in hot water for 15-20 minutes, after soaking, take a sieve & pass through it to extract the pulp, soaking of 1 cup will yield approximately 3 cups of tamarind pulp, divide the pulp in 1 cup for hari chutney and remaining 2 cups for red chutney, keep the pulp aside & soaked red chillies for making the chutneys.
For pudine ki chutney, add all the ingredients in a blending jar & blend to make a chutney. Prefer not to keep it too fine.Chutney is ready, refrigerate until served.
For lal mirch aur imli ki chutney, add all the ingredients in a blending jar & blend to make a flowing consistency chutney, add water to adjust. Chutney is ready, refrigerate until served.

For chicken mixture
Ingredients:
Chicken boneless 500 gm
Oil 2 tbsp
Jeera 1 tsp
Ginger garlic paste 1 tbsp
Green chillies 1-2 nos. (chopped)
Powdered spices:
Haldi ½ tsp
Dhaniya powder 1 tbsp
Jeera powder 1 tsp
Lal mirch powder 1 tbsp
Teekhi lal mirch powder 1 tbsp
Garam masala 1 tsp
Salt to taste
Hara dhaniya 1 tbsp (chopped)
Lemon juice 1 tsp
Method:
Mince the boneless chicken using a food processor or a mixer grinder, make sure not to mince too fine. Keep aside.
Set a pan on medium heat, add oil further add jeera, ginger garlic paste & green chillies, cook for 1-2 minutes on medium flame.
Lower the flame and add the powdered spices, add little water to avoid the masalas from burning & cook for 1-2 minutes.
Now add the minced chicken & salt to taste, stir & cook the chicken for 7-8 minutes on medium flame, during this process the chicken will leave its moisture, so make sure to dry up the moisture completely.
Finish by adding some freshly chopped coriander leaves & some lemon juice, mix well & the chicken filling is ready. Keep aside to be used later in making baida roti & spring roll.

For dough
Ingredients:
Maida 2 cups
Salt a pinch
Water as required
Oil
Method:
In a mixing bowl, add flour and salt, mix and gradually add water until the dough is formed, once it comes together, transfer the dough over the platform.
Now sprinkle some dry flour and knead the dough well by stretching it, knead the dough for at least 10 minutes.
Add 1 tsp of oil and knead for another 2-3 minutes.
Further apply oil over the dough surface to prevent from drying, and cover with a damp cloth and rest it for minimum time of 30-60 minutes.
Once the dough has rested, check for the gluten development by stretching small portion if its translucent you’re good to go, or else little kneading is required.
Further divide the dough in small equal dough balls, Apply oil over the dough balls to prevent from drying. As all the components are ready, start making the final baida roti.

Final Baida roti (quantity for making 1 roti)
Ingredients:
Dough ball 1 no.
Egg 1 no.
Fresh coriander 1 tbsp
Hari mirch 1 no. (chopped)
Onions 2 tbsp (chopped)
Chicken mixture 1/4th cup
Oil 2 tbsp (for cooking)
Method:
Start to roll the dough ball in thin translucent sheet, carefully stretch from sides to increase the surface area and eventually the sheet will become thinner.
Now, break 1 egg in a bowl, add fresh coriander, green chillies, onions, & chicken filling, whisk well & further add the mixture over the thin dough sheet.
Now, fold from all sides to seal & make a square pocket, you can trim the excess dough if required.
Set a pan on medium heat, pour oil & shallow fry the baida roti until crisp & golden brown. Lift the edges & fry from all sides. Your baida roti is ready, make other baida roti in the same way, you can tweak the ingredients as per your preference, cut in squares and serve hot with those lip-smacking chutneys.
