Seven years ago, baker Melissa Weller, having honed her skills at Sullivan Street Bakery, Per Se, and Roberta’s, went off to sell bagels at Smorgasburg: shiny little specimens with a delicately crisp, eggshell-thin crust and just the right amount of chewy crumb. She made them the old-fashioned way — hand-rolling the dough, kettle-boiling before baking — but she also used a sourdough starter and a long proofing to boost their flavor. These comparatively small and sturdy bagels took a stand against the prevailing style: big, sweet, and soft. They were more like what Pennsylvania native Weller imagined New York bagels once were and could be again. From Smorgasburg, Weller took her bagel recipe to Sadelle’s and later to High Street on Hudson, and her smaller, chewier, less doughy version set a new industry standard.

So imagine our surprise to find Weller ensconced at Gertie in Williamsburg, baking bagels every weekend that, by design and by her own description, are “bigger, softer, squishier.” How, you ask, could this happen? Credit (or blame) Gertie owner Nate Adler, who recently hired Weller as baker-in-residence (a pandemic-era title if ever there was one). Adler is not a baker, but he was born and raised on Manhattan’s Upper West Side, which does confer a certain degree of bagel-connoisseur cred. “In middle school, my friends and I would go to Absolute for lunch,” he says. “Late night, we’d go to H&H. Every New Year’s Day my Dad would pick up 100 bagels in these huge brown paper bags and throw an all-day bagel brunch at our apartment.”

Like most iconic foodstuffs, the best versions are the ones you grew up with, and Adler’s formative bagels were different than the ones Weller baked. “I described my ideal bagel to Melissa as wet and doughy on the inside and crunchy with a little bite on the outside,” he says. And after some Talmudic-level discussions on the topic, Weller began to question her faith. “What is the difference between doughy and too doughy?” she says. “What exactly is a New York bagel? I don’t even know if what I’d been making was a New York bagel.”

Ultimately, Weller — who, as previously mentioned, grew up in Pennsylvania on pretzels, not bagels — was willing to accept Adler’s bagel truth. So with much tinkering and taste-testing, and minute adjustments to hydration levels and proofing times, Weller developed a recipe that both evokes the romanticized bagel of Adler’s salad days and improves upon it with quality ingredients and fastidious technique. The new bagel has a glossy sheen, a moist crumb, and a distinct squish. Most notably, the hole has shrunk, sometimes to the point of disappearing completely. This is, to Adler, a very good thing. “I can’t believe it,” he says. “When I ripped into one, the dough on the inside was exactly how I remember it being as a high-school student going to H&H at midnight. She nailed it.”

Chris Evans is taking us to infinity and beyond! Pixar broke the news this week that the “Avengers” star would voice the iconic Disney character Buzz Lightyear in a new movie. The film, which will hit theaters in 2022, will simply be called “Lightyear.” Chris excitedly reacted to the news on Instagram, telling fans, “I can say 2 things with absolute confidence: 1. I didn’t stop smiling through the ENTIRE pitch. Ear to ear. 2. Everyone can rest easy. And get very excited.”

Richard Donner Confirms He Will Direct Lethal Weapon 5!

Even at 90, Richard Donner is not too old for this sh*t! At least when it comes to teaming up with Mel Gibson and Danny Glover, who will return to star in one final Lethal Weapon film. Donner revealed as much in an interview with The Telegraph, and confirmed that he will indeed direct Riggs and Murtaugh’s final outing.

“This is the final one,” Donner said. “It’s both my privilege and duty to put it to bed. It’s exciting, actually
 Hahaha! It’s the last one, I’ll promise you that.”

The Lethal Weapon franchise began in 1987 and has since spawned four films, the last being Lethal Weapon 4 way back in 1998. That film ultimately grossed $285 million at the box office (against a massive $100-150 million budget), but score lukewarm reviews and reactions from critics and audiences alike. Hopefully, Donner has enough juice left to give us something more along the lines of Lethal Weapon 2 so the series can go out with a bang.

Earlier this year, Danny Glover told Variety that “there is something of a plan” in regards to a fourth sequel.

“I don’t want to give away the plot on the script that I read, but I found the plot had very strong relevance to some of things that are happening today,” Glover said. “I can say that. But that was in January. History changes so fast. But yes, there’s been talk about it. I can only tell you, if it does happen, there is something extraordinary in it. If Lethal Weapon gives us some sort of contribution to understanding a little bit more. It would be interesting to do. It would be interesting to see how we take this within the political framework we are in; the economic framework that we are in. And especially that framework as opposed to the communities that have been affected by the kind of police violence, the kind of police standards, and the power that they exert as well. And what would be interesting from that vantage point is what that attempt could be like at this particular moment.”

Created by Shane Black, the first film was directed by Richard Donner and released in 1987 and followed beleaguered veteran detective Roger Murtaugh (Glover) as he is partnered with reckless and PTSD-afflicted Martin Riggs (Gibson). The buddy comedy received rave reviews from critics and grossed over $120 million on a $15 million budget and spawned a franchise that included three sequels starring the two and a TV adaptation with Damon Wayans Sr. and Clayne Crawford taking on the roles of Murtaugh and Riggs that ran for three seasons on Fox before being cancelled.

A fifth film has been in the talks for years, though stalled for a long time as Gibson and Glover have expressed a lack of interest and problems with various scripts offered over time until January saw the news that Lethal Weapon 5 was in active development with the duo returning alongside Donner.
