On this episode of Free Thinking, Montel explores the importance of access to healthy food for all socio-economic groups and neighborhoods. He is joined by his friend, Taja Sevelle, founder of Urban Farming, a non-profit organization dedicated to solutions that create healthy communities. Several studies have investigated disparities in the distribution of neighborhood vegetation, the proximity of residences to playgrounds, and the accessibility of supermarkets and grocery stores, but few have examined access to fast-food outlets and convenience stores as a function of neighborhood racial and socioeconomic demographics. The neighborhood environment can help promote and sustain beneficial lifestyle patterns or can contribute to the development of unhealthy behaviors, resulting in chronic health problems among residents. What can we do about it? Empower communities to have more control over their food sources. In Phase I, Urban Farming installed over 150 community and school gardens of free food in 25 states in the U.S., as well as a school garden in Montego Bay, Jamaica. There are now over 66,000 gardens worldwide in over 60 countries that are each a part of the Urban Farming Global Food Chain®. As of October, 2020 Urban Farming has helped 1,050 families and individuals start their own gardens.

To hear David Lowenstein tell it, the idea for the andouille-sausage corn dog on the bar-snack menu of his new East Village restaurant, Sidney’s Five, was hatched long before the current Korean-corn-dog craze. It was back during the dark days of last summer, when business at his midtown sandwich shop Pickler & Co had slowed to a trickle and he and his chef friend Edie Ugot (late of the Breslin and the Spotted Pig) began plotting the quirky, cook-what-we-like-to-eat restaurant of their dreams. Their take on the corn dog — andouille sausage; buttermilk-based cornmeal batter; pepper jelly, Carolina-style mustard sauce, and pickles on the side — gives the state-fair staple a superb sweet-and-spicy southern flair. It’s a different animal from the proliferating Korean corn dog, which, nomenclature notwithstanding, is battered with rice and/or wheat flour and focuses so much attention on what can be applied to the shell (sweet-potato cubes, crunchy dried ramen, Cheetos dust, and bean powder, just for starters) that the inner wiener shrinks in significance — sometimes, as in the case of the Instagram-popular melted-cheese dog, to the point of disappearing completely.

For her part, Ugot encountered a few obstacles on the road to ultimate corn-dog success. Before she mastered the delicate art of submerging and twirling the sausages in batter, Ugot says, “everyone had to eat, like, 20 one day until we got the ratios right.” The result is plump and golden, speckled with sea salt, nostalgic but not kitschy — much like the rest of the eclectic menu, which will expand as the kitchen staffs up to emphasize seafood like fish and chips and a pastrami-cured-arctic-char Reuben. The two other partners, former Union Square Cafe bartenders Walker Chambliss and Kai Woo, strive for a similar balance of high and low with a drinks list that includes five takes on the martini and one guava-coconut-daiquiri slushie.

The horror film is directed by Nora Unkel in her directorial debut and stars Alix Wilton Regan (The Wife), Giullian Gioiello (Scream: The TV Series), Claire Glassford (Collateral Beauty), Philippe Bowgen (Supernatural), and Lee Garrett (The Undoing).

As she writes, the characters of her novel come to life and begin to plague her relationship, forcing everyone—including herself—to question her sanity.”

Kantor Goes to New Heights on Latest Smash, ‘Unbroken’

Kantor slays it again with “Unbroken,” a single that absolutely nails a mark showing off many of Kantor’s strong points at once. The USA-based DJ producer has variety of angles he comes at his dance music track’s with, future bass, house – vocal/non-vocal – all being apart of the palate seen from him before. “Unbroken” doubles down on the emotional side of what Kantor has to offer, the vocal taking off a stressful edge with it’s soothing quality, while the future bass rains down hard with it’s rhythmic nature. A trap influence in the percussion holds the setting here together nicely and hard hitting drums sharing a certain video-game edge to them.

Kantor has scored big since starting this project in late 2020. Alison Wonderland has spoken highly about him even having Kantor on her show, he’s achieved consistent if not growing results on Spotify, and has no issue injecting a vision into the music he puts out. More music will likely come from the hard-working multi-talent in good time. Until then, “Unbroken,” hold’s over nicely.

*Recipe*
Ice Cream Cone Cake
1. Preheat oven to 160℃(320°F)
2. Put two room temperature eggs into a mixing bowl and beat with a whisk or mixer until frothy
3. Gradually add in 60g of powdered sugar into bowel, mixing continuously until thick
4. Gradually sift in 60g of flour and mix with a rubber spatula
5. Mix in 15g of melted butter
6. Pour batter into ice cream cones and bake for 15 minutes
*Check if the cake is done by inserting a toothpick in the center. If it comes out clean, it’s done!

Ice Cream Frosting (Makes 3~4 scoops)
1. Make meringue by adding 10g granulated sugar to 50g of egg white and beat on medium speed until soft peaks form.
2. In a pot, add 70g granulate sugar, 20ml water and set to medium, heating until it forms a thin syrup.
3. Gradually add syrup from 2 to the meringue and beat on medium speed until stiff peaks form.
4. In a sperate bowl, cream 200g room temperature unsalted butter, add in 1/3 of the meringue and mix in with a rubber spatula.
5. Gradually add the rest of the meringue and mix well until soft.
6. Add color to the butter cream. To make the lemon ice cream frosting, use yellow food coloring and lemon peel. To make the mint chocolate, use green food coloring and add chocolate chips.
7. Scoop frosting onto ice cream cone cakes and you’re done!

1.ボウルに常温に戻した卵2個を入れ、泡だて器で混ぜる。
2.粉砂糖60gを3回に分けて加え、スジが書けるくらいまで混ぜる。
3.ふるった薄力粉60gを3回に分けて加え、ゴムべらでふわっと混ぜる。
4.溶かしバター15gをそっと入れ混ぜる。
5.アイスクリーム用コーンカップに流し入れ、160度に予熱したオーブンで15分焼­く。
  竹串を刺して生地がつかなければ焼きあがりです。

バタークリームを作ります。
この分量で、アイスクリームディッシャー3〜4杯分できあがります。
1.卵白50gにグラニュー糖10gを加え泡立てて、メレンゲを作る。
2.鍋にグラニュー糖70gと水20ccを入れ、
  中火にかけ、少しとろみがあるシロップを作る。
3.1に2を2〜3回に分けて入れ、泡立てる。
  しっかりとしたツノが立つまで泡立てる。
4.前の晩から出しておいて、やわらかくしておいた無塩バター200gをクリーム状に­練り
  3の1/3の量を加えてゴムベラで混ぜる。
5.残りの3を加え混ぜる。
6.出来上がったバタークリームに着色する。
  今回は、レモンアイスクリームぽく黄色に着色したバタークリームには、
  レモンの皮のすりおろしを入れ
  チョコミントアイスクリームぽく緑色に着色したバタークリームには、
  チョコチップを入れました。
7.アイスクリーム用コーンカップに焼いたケーキにアイスデッシャーで
  バタークリームをのせる。
  出来上がり!

余ったバタークリームは、ホットケーキにつけて食べると最高ですよ!
