Welcome to Thirstory, where we whet your appetite with pages from the Interview archive that were almost too hot to print. 35 years ago, the late, great Prince unleashed his album Parade, which featured the hit single âKiss,â to the world. To commemorate the recordâs milestone anniversary, weâre making it (purple) rain with the singerâs legendary past features. Â

A musical fact almost as devilish as Lil Nas X sliding to the depths of hell to perform a lap dance on Satanâs lap? Princeâs âKissâ almost never saw the light of day. According to one of the songâs original producers, David Z, the late singerâs record label, was appalled when the single was submitted for review in 1985. As Z told SOS, âIt was so different to everything else out there that the Warner Brothers executives freaked out when they first heard it. I was going to get credit as the producer, arranger, everything, but when I talked to the Warnerâs A&R guy he said, âOh man, Prince really screwed up. It sucks.ââ While we canât imagine anyone having the gumption to deliver a blow like âIt sucksâ to the artistâs face, in true Prince fashion, he perseveredânot only including the song on his eighth studio album, but also making âKissâ its lead single. That album, aptly titled Parade, was just that: a procession of 12 songs that scream and shout the genre-bending magic of the singular artist. On the 35th anniversary of the albumâs release, itâs difficult to envision a Prince repertoire without the album. By 1986, when Parade was released, Princeâs previous records had sold millions of copies globally and just a year prior, he took home the trophy for Best Original Song for âPurple Rainâ at the 57th Academy Awards. While the label seemed to doubt his abilities at the time, itâs also the same one that had placed a paid ad in the Interview pages to promote Princeâs 1981 album Controversy, featuring an image of the singer in a shower wearing nothing but skivvies and a crucifix at his back. Our lesson of the day? Never. Question. Prince.Â
Claudia, the acclaimed fine dining concept from Chicago chef Trevor Teich will have a new home come summer 2021.

The restaurant is named in honor of Chef Teichâs mother, Claudia. âShe is, and always has been, a constant source of inspiration, he says. âSheâs an example of what can be accomplished with hard work, dedication and creativity.â

The road to finding Claudiaâs permanent home may have been a winding one, but itâs a road met with consistent community support and punctuated with praise from some of the cityâs most discerning critics. Claudia was born in 2015 as a twice monthly pop-up in the West Town neighborhood of Chicago. The three-year dining event earned rave reviews from critics and foodies alike as well as a nomination for the 2017 Jean Banchet âBest Alternative Diningâ award. It was clear that the world was hungry for more of what Chef Teich was cooking (iconic Chicago Tribune critic Phil Vettel awarded the restaurant three stars and called it simply âbrilliant.â)

In October 2019 he opened the doors to Claudiaâs next semi-permanent location in the trendy West Loop neighborhood. But when the COVID-19 pandemic hit, it seemed the right time for Chef Teich to close those doors in search of Claudiaâs real, permanent home.

This summer, Chef Teich will introduce diners to the newest version of his Claudia concept, this time at 1952 W. Damen in the Bucktown neighborhood. The elegant restaurant will offer a seasonal 10-course tasting menu, which will tell a story through food â each dish being crafted as a delicious and engaging âchapter.â Guests are meant to feel like they are being taken on a delightful journey throughout their evening.

Those who have dined with Chef Teich before may recognize a handful of innovative dishes. One of those items will be âSnails In The Woods,â a braised-and-tempura fried snail dish featuring mushroom & truffle âsoil,â shaved truffles, fresh herb âmossâ and edible flowers. The rest of the tasting menu will feature the robust flavors, varying textures and contemporary style that Teich has become known for. âThe menu â and entire dining experience â is designed to entertain, excite and delight,â he says.

The beverage program will be run by General Manager and Sommelier, Alex Reed. Reed, who was previously at Grant Achatzâs Alinea and Next as well as Mattias Mergesâ Mordecai, will present an offering of wines by the glass in addition to the standard and reserve wine pairings. Guests will also have the option of ordering both classic and original cocktails from The Bar at Claudia, which Reed can expertly pair with specific moments in the menu.

1952 W. Damen has a rich history of housing outstanding restaurant concepts from some of the worldâs most accomplished and recognized chefs. The storied address is the former location of Stefanie Izardâs first restaurant, Scylla and Takashi, the Michelin star restaurant by Takashi Yagihashi as well as a former concept from Chef Charlie McKenna.
As for the ambiance and dĂŠcor, Claudia will embody a subtle elegance that is both contemporary and intimate. Guests can expect the second-floor dining room to feel chic, comfortable and refined.
The first floor will be home to The Bar at Claudia. That space will feature an a la carte menu of modern American and French classics as well as signature craft cocktails. The Bar meus will express the creative and fun style the Claudia brand is known for. The Bar at Claudia will be an ideal destination for an après-work bite, date night or a small get-together with friends; both reservations and walk-ins will be welcome.

Prior to opening Claudia, Chef Teich worked at some of the countryâs best restaurants including L2O (three Michelin stars), NoMi (one star), and Acadia (two stars), as well as Twist by Pierre Gagnaire in Las Vegas (Gagnaire was voted best chef in the world in 2015 by Le Chef List of The Best Chefs in the World.)

With Teichâs previous endeavors being described as âMichelin-in-waitingâ (Michigan Avenue Magazine,) âa pitch-perfect combination of flavors and texturesâ (Phil Vettel, Chicago Tribune) and a âblend of precision and whimsâ (Jeff Ruby, Chicago Magazine,) diners are undoubtedly in for a for a true culinary adventure unlike anything else in the Windy City!

Ingredients:
1 kg cabbage
2 ½ tbsp salt
1 ž cups water
1 medium onion
1 Âź tbsp ginger
2 large garlic cloves
1 cup daikon
½ cup red chili
1 tbsp sugar
2 tbsp fish sauce
1 tsp salt
Instructions:
1. Soak cabbage in salt water
2. Rest cabbage for 30 minutes
3. Combine shredded onion with chopped ginger, minced ginger, shredded daikon, red chili, sugar, and fish sauce in a bowl
4. Salt to taste
5. Wash cabbage in cold water then mix with red paste
6. Transfer kimchi to a jar and store for 2 days for fermentation
7. Ready to enjoy as early as 2 days!
