Naples Grande Beach Resort is pleased to announce the appointment of Marcos Seville as the new Executive Chef.
Marcos Seville is a graduate of The Culinary Institute of America, Hyde Park, NY. An active member of C-CAP, the largest independent culinary / hospitality scholarship program in the country, Seville had accepted a scholarship to attend CIA and joins the Naples Grande Beach Resort team with an exceptional culinary education.
With an extensive background in hospitality that spans over a decade with leading properties, Seville’s culinary journey includes time at the Arizona Biltmore, the Renaissance Glendale Hotel & Spa, The Peabody Orlando (now known as the Hyatt Regency Orlando), and the Omni Scottsdale Resort & Spa at Montelucia.
As the Executive Chef at Naples Grande Beach Resort, Seville oversees operations of the resort’s six restaurants, including The Catch of the Pelican, and the lobby level lounge, Mantra.

At the property’s signature restaurant, The Catch of the Pelican, Chef Seville is looking to heighten guests’ dining experience, by giving the flagship restaurant a luxury feel without the fine dining cost. Seville plans to expand the menu by cultivating new dishes inspired by Florida’s Caribbean influence. Fresh and local ingredients will highlight a Floridian menu featuring fine seafood and dried aged steaks.
Having arrived from the West Coast, Seville is interested in immersing himself with the East Coast palate and specifically the lively Florida food scene. Seville is also looking to incorporate more fun, immersive dining experiences, including cooking classes, special tastings, cupcake decorating, and pizza making, where he and his team can interact and engage with guests daily.
A Phoenix native, Seville has settled in the Naples area with his wife and four children and is looking forward to sharing his talents with the community at Naples Grande Beach Resort.
