James Beard Award Finalist Chef Steve McHugh Continues His Mission to Use Native TX Ingredients + New Restaurant

Beginning his life on a working farm in a small Wisconsin town, Chef Steve McHugh was able to observe and appreciate the natural gifts that came from his family’s soil. As Steve experienced the farm-to-table cooking style within his household, he developed a love and respect for the purity of what comes directly from the Earth. Fueled by his passion, McHugh is a 5-time James Beard Award finalist, “Best Chef: Texas” and known as San Antonio’s most celebrated chef for his gastropub Cured. McHugh decided not to stop with just one restaurant, but to honor his personal culinary philosophies, which propelled him to open his second restaurant, the newly established Landrace at the Thompson Hotel, San Antonio.

Putting on a pedestal the pastoral beauty of foods, McHugh and the team at Landrace are working with heritage growers close to home – sourcing from twenty local producers and farmers who cultivate the earliest indigenous ingredients of the region. To start, the Spiced Bandera Sausage with sweet Strawberry Mostarda and savory Butter Pecan Granola features Quail sourced from the nearby Broken Arrow Ranch. This family-owned business works with wildlife ecologists to identify over-populated herds on private land across Texas, utilizing selective harvesting to improve the health of the herd and land – an approach consistent with McHugh’s own high standards and commitment to respecting the environment.

Equipped with a wood burning, massive stainless steel grill by Grill Works, executing time-honored Argentinian techniques, Landrace constantly showcases the grill with a bounty of perfectly cooked meats from around the region. McHugh is mindful to utilize underrated cuts of meat in unexpected ways, and the 16-ounce New York Strip stands out as both bold and beefy. It’s served with Chili Pequin Au Poivre – growing in Northern Mexico and Central Texas, the Pequin Pepper is to be 13 times hotter than a Jalapeño, with a flavor that is citrusy, smokey and nutty – all at once. And, cooked to the precise specifications over the open flames. The juicy Berkshire Pork Chop is accompanied by Peychaud-Pear Butter that enchants the tastebuds as it delicately enhances the sweetness of the meat.

Conclude with the scrumptious Strawberry Cremeaux – combining White Chocolate and locally grown Strawberries – with a nutty Toasted Malt Almond Torte. It’s all topped with fresh Basil Gelato from OroBianco Italian Creamery, the first and only water buffalo dairy and creamery in the state of Texas. The Carrot Cake stands out as a slice above the rest – with icing flavored and brightened by locally grown, Prickly Pears and Butterscotch that is prepared in-house with single-malt Scotch.

The fresh, locally sourced ingredients expand beyond the plate with a craft cocktail menu that was built “from the ground up!” The Sin and Smoke, featuring Maker’s Mark, has been house-infused by Mesquite – the origins of which can be traced back to Texas before the arrival of Spanish settlers – perfectly paired with Angostura Bitters and Simple Syrup. Or the Bittersweet Symphony is a deep, layered beverage with a masterful mix of Beefeater Gin, Texas Arbequena Olive Oil, Black Olive & Tomato Infused Campari, and Carpano Antica.

While “intense journey” may have been putting it mildly, considering the fear, confusion and self-loathing he had to overcome on the way to accepting his truth, his true fans barely batted an eye, just happy that their heartthrob sounded so happy. He wrote in Me that, while he knew he was among the lucky ones, his coming out experience had been “only positive and empowering.”

Then it was back to the life of your average global-celebrity dad, walking the tricky balance between being newly open about his sexuality but also still fiercely protective of his family’s privacy. He focused on parenting Matteo and Valentino, fell in and out of love a few times before finding lasting happiness with Yosef (whom he exchanged messages with for six months before they met in person), and started advocating for LGBTQ+ rights in his native Puerto Rico. 

“If I have the platform that social media has given me to talk to 75 million people, it would be horrible not to talk about the things that people need to hear,” he told Out last year.

Martin announced the birth of Renn, his fourth child, while accepting the Human Rights Campaign’s National Visibility Award for his years of good work in 2019. “I love you,” he told Yosef, adding, “My beautiful twins, Valentino and Matteo, they’re also here. I love you with all my heart, you’re my strength, you inspire me every day, you motivate me to keep doing what I’m doing and you guys are amazing kids.”

He continued, “I love you. Lucia, my baby girl who is not here with us, she stayed at home with Grandma, but she’s also the light of my life.”

Free Guy is currently playing in theaters, and the Ryan Reynolds action comedy comes jam packed with eye-popping visual effects. Some of those FX, including the “Street Squeeze” sequence, come courtesy of Scanline VFX.

ComingSoon was lucky enough to interview Laurent Taillefer, Associate VFX Supervisor at Scanline, who graciously discussed his company’s role on the blockbuster production.

Jeff Ames: What’s your position at Scanline VFX?

Laurent Taillefer: I work here as a VFX Supervisor on some shows, and others, such as Free Guy, Associate VFX Supervisor [alongside VFX supervisor Bryan Grill] as the VFX Supervisor on Free Guy. My role as Associate VFX Supervisor is to oversee the global VFX processes across all departments, ensuring quality and efficiency overall, as well as supporting the VFX Supervisor (Bryan Grill) with creative decisions.

What were some of the key scenes you worked on for Free Guy?

We focused mainly on three key sequences: “Badass Mansion”, where we designed and rendered the interior of the mansion; “Street Squeeze”, the sequence where the hero’s car is driving through compressing streets, and “Server Room”, with the building glitching and crumbling digitally as the servers get shut down.

In the VFX reel, one of the big sequences is the city crumbling action piece — how many people does it take to create a shot like this?

It takes a village! The Street Squeeze sequence had its own team on the 3D side, led by CG Supervisor Matthew Novak. We had half-a dozen asset artists build the city based on real-life scans and references of Boston, a Layout Team of 4 to build the path of the chase, 6-8 FX Artists to break it up, 4 lighters and half a dozen comp artists, with a few supervisors to help filter the very large amount of layers being passed across all these. Overall we worked with a team of 30 people.

There are so many details in these big moments. How do you know how far to push the effect? In other words, is there such a thing as too little or too much detail?

It’s an iterative process. We start by selecting a few hero shots that represent the most angles (i.e. a very wide shot, a real close-up one, a travelling one), to develop our recipes. We render these in a very simple form with simple grey shaders and lighting effects in order to go through a lot of versions as fast as possible. We make this a collaborative process by sharing each significant step with the client so we can get early notes and avoid any last minute surprises. This also allows for the director to change the edit and cut to adapt to the timing and look of the effects, so it’s really a two-way conversation. Once the choreography of the FX is locked, we start to refine it by adding smaller details, such as dust, gravel, secondary destruction, etc. That’s when the question about when to stop becomes critical, as we need to stay on budget and schedule. Internally, we usually answer it by comparing the renders to real life examples, and checking if no components are missing to make our images of photographic quality.

The collaboration between the VFX Supervisor and myself is key here, as we can each bring a fresh pair of eyes to the work – As well as every other supervisor’s input. We also will submit our work to other Scanline supervisors every so often to get an unbiased feedback. So essentially, real world references and objective feedback are the answers.

On Free Guy, this process was made easier thanks to client feedback – As we had been able to establish a very early collaboration, and they responded really well to our work, the main note was mostly to “keep going”. So once we had a satisfactory version, we simply used the remaining schedule and budget to add extra details, until we met the deadline, each version out-wowing the previous.

What made Free Guy unique compared to other projects you’ve worked on?

The collaboration with the client was outstanding. We were able to establish a very friendly and constructive relationship, so the notes were almost always encouraging and positive, bringing a very good atmosphere to the show. The team had a great time working together, with very limited delivery rush periods.

The most unique thing about this project was something different, though. The COVID crisis hit as we were in the first third of the production. While many projects were being put on hold, we were lucky enough that the shoot had wrapped, and we had all the material and support to continue working. In these insecure times, we had to adapt our workflow to remote work, having to deal with a client equally affected. Thanks to solid support from the Scanline facilities team and a very understanding client, we were able to transition in a very smooth way, and continue to work on this very positive project, which really helped navigating through the insecurities of last year.

Is there a shot/detail/moment that your team worked on that you’re particularly proud of in Free Guy?

That’s a tough question – Like asking a parent for their favorite child. All sequences had technical and creative challenges, which were all met with great efficiency by the team.

I’d say the tight collaboration between our modeling, layout and effects team allowing the Street Squeeze sequence to take place in a real-world scale environment was one of the biggest feats. You have a very high fidelity simulation, down to the smallest pebble, taking place in a fully built city, allowing for immense flexibility. Seeing that setup come together and work seamlessly was a great satisfaction.

Was there new technology or software you employed for Free Guy that you hadn’t used before?

Scanline has been integrating Houdini (and FX simulation software) to the pipeline, to complement the in-house Flowline fluid simulator technology. Adding a new piece of software in an FX production pipeline is always a big challenge, and doing it while running a show even more so. The FX team, under FX Supervisor Hannes Krieger’s supervision, once again did wonders, and we were able to leverage the strengths of both software together by the end of the show.

Pop and EDM Merge Flawlessly With Nick De La Hoyde and D.E.L – Check out Two New Tracks from the Trio of Brothers

We’ve become marginally obsessed with Nick De La Hoyde and his EDM-infused pop here at Your EDM over the last few years, and recently the obsession grew when he introduced his group project, D.E.L, with his brothers Joseph and Timm. The flipside of the same coin, D.E.L makes equally beautiful pop-infused EDM.

The trio have gotten into the habit lately of dropping tracks close together on their respective Spotify pages. The newest, semi-acoustic pop love song “About U” released on Nick’s solo stream on September 3, while “Yoko” just hit D.E.L’s page about a week later and could be the progressive house anthem of the fall. Both with corresponding videos, “About U” and “Yoko” make it clear that no matter what genre the De La Hoyde boys are working on, they work together and it produces amazing results.

De La Hoyde’s “About U” is a bit more acoustically-tinged than some of his recent solo work. With a lyrical verse structure that follows the same pattern as Love To’s “Habits (Stay High)” but in every other way is the antithesis of the 2014 hit in both subject matter and key. Underneath the vox and acoustic guitar ornamentation, the brothers laid down a slower yet nonetheless recognizable drum & bass beat with some trap ornamentation in the chorus and codas. This is what the De La Hoydes do so well: mixing and blending a number of different styles and genres well enough that they’re interesting to underground music nerds while still having mass appeal.

“Yoko,” on the other hand, is more solidly in the EDM camp. The chill yet fervent and danceable prog house beat drives the tune rather than the vox. The vox, by the way, are once again impeccably done and add the pop cachet to the track that would otherwise render it more lofi than anything. The future bass-style effects and rendering on those vocals is, somewhat ironically, what turns “Yoko” into a Chainsmokers-style beauty banger. Pop, pretty and uplifting, “Yoko” shows the real potential of the brothers who call themselves D.E.L.

If you’re trying to get a more pop-inclined friend to cut their teeth on EDM, artists like the De La Hoydes, either solo as nick or D.E.L as a trio are a good bet. Bringing the melodies of pop and lofi indie pop together with EDM beats and sound design the way that they do, it’s only a matter of time before the rest of the world joins YEDM in our obsession over these Aussie artists.

Cumin Powder – 1/2 tsp

Although everyone understands that Nielsen ratings usually play a big role in TV cancellations and renewals, most fans do not get to participate in that system.
